 Pudding Ice Cream Topping

This is Hawkeye's favorite desert. I don't do much cooking anymore, but I always have and always will have this ready for him when he comes home from the sea. I leave out the walnuts, he hates them. I sometimes pour canned apricots or peaches over it after I take it out of the oven.

2 eggs
11/2 cup sugar
2 tsp vanilla
1/4 cup flour
21/2 tsp baking powder
1/2 tsp salt
1 apple peeled and chopped
1 cup walnuts

Mix eggs and sugar vanilla and blend. add flour, baking powder, and salt. beat until kind of thick, stir in fruit and nuts.

Pour into geased baking pan, about 8" square works best. Bake for 1/2 hour. if a toothpick comes out clean it's done.

Let cool, but serve warm over ice cream.

it sounds good.
id leave in the walnuts if i made it though.

i think id use pecans instead of wlanuts after rereading the recipe. :)

This stuff is so darned good! We are invited to parties where people don't like us but they invite us just cause they hope we will bring this pudding ice cream topping!
