I've never canned before and want to start this spring who has some good tips and recipes?

OST, we do a lot of canning. You should get the Blue Book of Preserving. It's put out by Ball (the company that makes jars). It's pretty thorough. There is too much to list here.
It's not hard to do canning, but it takes time. We have canned corn, potatoes, tomatoes/sauce/juice, sweet peppers, hot peppers and venison. We have also frozen a lot of fruits and veggies - both wild and from the garden - as well as game meat. Even made jelly/jam a few times.
When you look at the Blue Book, you will see - and I recommend - you get a pressure canner.

you can raw pack and pressure meat for 90 minutes and its great. MAKE SURE you pressure it for 90 minutes to kill any bacteria.
the Ball canning book is a good thing to get also as scansy has stated.

Sunny, I have canned venison with just boiling (before I had the pressure cooker). There was an article on it in the PA Game News a while back. It turns out pretty much the same and we never had any problems with it.
The canned venison is good to add to spaghetti sauce, or put in gravy and put over mashed potatoes or bread. Its also good in it's own juices, just heated up.

Now, we do pressure can it and I would recommend anybody else do that too. Of course anything we do with tomatoes doesn't get pressure canned though. My family has been doing tomatoes that way for generations. I think it's ok because of the acid in the tomatoes.
