my sis is kinda prissy and one of her husbands friends gave him a couple boned out hind quarters last year and she never used them SO..... the other day i was there and asked her what she was gonna do with em and she said throw em out..SO.. i confiscated them and finally got arund to thawing them out a bit this mornin and slicing them up for jerky. i use a dehydrater and this is the first batch, from the looks of whats left looks like theres gonna be about 3 more after this one. it smells yummy, i can tell you that. ny son is very happy too because he loves deer jerky. have any of you guys ever used the oven to make jerky and if so, how do you do it?

I haven't used an oven...but uncle Rod does all the time...I'll find out the details for ya and let ya know.
that looks good....but then.....so does Pamela Anderson...and we all know she aint worth a hoot for nuttin.

Sunny, we make jerky all the time in the dehydrater - deer and goose.
But when I was a kid, my parents used the oven. I remember them cutting it in strips maybe 1/4" thick and 4" long or so. After seasoning/marinading, they used a bunch of wood toothpicks - pushed them through one end of the meat. Then they used the toothpicks to hang them over the oven racks. Set the oven to it's lowest setting - usually about 200 or so, and then leave it open a crack.

Looks great. I make a lot of it out of venison. Both out of strips and ground venison. I use a dehydrator.
