I think it was Huck that wanted a beer batter recipe. This is the one I use. I cooked some sea bass last night and a friend asked me for the recipe.
On the boat I omit a few of the items, still turns out great.
4-6 fish fillets (any white fish, if you have to buy fish I recommend tilapia, I'll explain later)
Juice of ½ lemon 2 Tbls. chopped parsley (I used thyme last night, word from the wise, use it sparingly, it will overwhelm the fish flavor)
2 Tbls. cooking oil salt and freshly ground pepper Oil for deep frying
BEER BATTER 2 large egg yolks ½ cup beer ½ cup flour ½ tsp. salt
Cut fillets into 2-4" pieces. Put in a bowl with lemon juice, parsley, 2 Tbls. cooking oil, and salt and pepper to taste. let sit for 20 - 30 minutes, then pat dry with a paper towel. Heat oil for deep frying, I use a Fry Daddy. Dip pieces of fish into batter, and then into the hot oil. Cook the pieces in the oil until golden brown all over. Stir them occasionally with a wooden spoon to keep them from sticking together. Drain on paper towels.
Do not hold a plate of this over your head, your tongue will beat your brains out trying to get to it.
Tilapia are farm raised, and about the only farm raised fish I will buy (why put fellow fishermen out of work?). They are vegetarians, so if they were to escape into the wild they would not pose an environmental hazard to native fish, in fact they would contribute to the native food chain.

An alternative for tilapia is to broil it. When you buy tilapia it is whole, but cleaned and scaled.
Make the batter a little thicker pour about a 1/4" oil in a glass baking dish. fillet the tapia and lay them skin side down in the dish. Spoon the batter mixture over the fish. put the baking dish in the 2nd or 3rd tray in the oven. broil until batter is golden brown and fish is flaky.

Not to Top your recipe Hawk, But have ya all tried using Cornflour instead of Regular flower or corn meal. The corn flour gives it a great flavor. Had to stop using it for years because couldn't get it around here. Now that we have a lot of Mexican population around here, the stores have started stocking it again. I just use this flour and salt and pepper, and I'm in hog heaven! Gonna try your recipe as soon as I get a batch of flounder Hawk.

I haven''t tried cornflour, but I have used cornmeal. It'll work, but I don't care for it, but I don't like cornbread, neither.
Cornflour is an altogether different animal, and I love corn tortillas, I can eat them with heated with butter all day long, so that might be even better than my recipe, I'll have to try it!

when i do cook fish(which isnt that often) i use a cornmeal mixture to bread it with.

I use Bisquick, beer, and salt & pepper. Dip fish in it and deep fry. Walleye is exceptionally good in it. I prefer tilapia broiled and dipped in lemon butter when I eat it. I wish we had those in MN, they are a great eating fish! "I don't care much for fish". No wonder you're always getting sick. My mama used to always say to me, when I was growing up, "Fish will make you big and strong." She never mentioned possum, though.
