its an indian dish..made up of the broth fromm pork bones and the meat that has been removed..its cooked off the the bone and then cornmeal..regular cornmeal is added and it makes a thick batter...its put into loaf pans and chilled then cliced and fried..it has sage and other seasonings added to it...some people call it head cheese or scrapple depending on the part of the country youre in...
its called heaqd cheese cause the hogs the meat from heads are used in it alot...

Now I know why I was confused. Some southern folk are always taking our good German foods and respelling them. , no wonder I was confused. Scrapple is strongly associated with Philadelphia and neighboring eastern Pennsylvania, New Jersey, Maryland and Delaware. Among the Pennsylvania Dutch and in Appalachia, scrapple is known as pawn haas or pon haus, a term hailing back to the old German dish. Yes, I've made it, I've ate it, and it's good eats ;D

My Pa loves the stuff... we call it head cheese....well they do...i call it garbage........but for catfish bait it may work......mix a tad bit of limberger with it and it may be great....for the fish ....LOL
