Gonna make some Bagna Cauda tonight. It's something from my Italian roots - northern Italy several generations back. It's a veggie dip/salad dressing. Gotta make this slowly though, or it will burn and then you got nothing but a mess. My family always makes this in the fall/winter.
Three sticks butter Half a head of garlic Olive oil Two tins of anchovies - make sure you don't get the kind with capers in them.
Start by melting the butter slowly. Add the garlic (chopped fine) and saute over lowest heat setting until butter clarifys. You have to keep stirring continuously at this point or it will burn.
When the butter clarifys, add olive oil - about two cups - you are trying to get double to 2-1/2 times the volume of the butter already there. Add the anchovies, oil and all. Continue to cook over a low heat until the anchovies are nothing but a paste on the bottom of the pan.
Eat this hot with dipping cabbage and bread (good loaf of italian bread). The best is to scoop some of the anchovies off the bottom when dipping.
This will keep forever in the fridge and works great as a salad dressing (especially for escarole) or marinade.
Some variations I have had include adding sardines or cream, but I like the basic the best.

OK, change i plans. I bought sardines today by mistake instead of anchovies. I'll make it tomorrow.
