this is out of a doe bubby killed. figured instead of freezing this one id can it. makes for some yummy quick meals. i still got more of it to go.

Looks good. I can deer sometimes too. But it's been a couple of years.
Do you boil the jars or pressure cook?

scansy ya always gotta pressure can meat. 90 minutes at 10 lb pressure for deer and alot of other meat.
if you dont pressure can it you could get real sick.

I've heard that, and pressure can now. At one time, we boiled it. Never had any problems. We boiled it four hours. Although, without the higher temperatures, I'm not sure if it matters that we went longer. We got that recipe out of the PA Game News Magazine years ago.
We still can tomatos/spaghetti sauce/juice without pressure canning. The high acid content in the tomatos doesn't let anything grow.

You can just dump the meat in sauce for spaghetti. Or, you can dump a jar of meat, jar of gravy, some veggies into a pot, heat it up for stew.

i just open a jar, add some water to it. cook it through then drain off the extra juice and make gravy. make some mashed potatos and corn and/or beans and ya have a great ,filling hot meal in minutes.

I love my pressure canners. They can be used as boiling water bath canners also. There's few things that I don't can, just things that will turn to mush canning. Carrots,parsinips, green beans,corn, and potatoes along with canned meat and you have a stew. Opps forgot the tomatoes. Canned potatoes are great fryed also.
I set up all my pressure canners with a weight gage and a dial gage, can turn the heat way down and keep the pressure right where you want it without watching constantly, alowing me to get the next batch ready.
