Some of our cats. Tried to post more then one but got lucky getting one to post I think? These are some 12-15lb flatties we catch on live bait. Usually have at least one 30lb plus every weekend or every few days running the lines.

i usually dont like fish but i had some fresh cat filets we got in Louisiana and they were delicious!

Most fish isnt too bad. Alot depends on how it was handled and cooked. Flatheads are the best tasting cat I think and no matter how big they get theyre good eating.

Ive ate carp fried and we have pressure(sp) cooked them and ate them as fish pattie and liked them well enough both ways.
I think your right Cat about the buffalo beeing a type of carp but I dont know for sure.

do you guys that eat carp take out the dark strip of flesh before you eat it? ive always heard its strong but have never eaten carp so dont know for sure.

Yes thats the mud line. Smaller carp/buffalo etc it isnt too bad but the bigger ones it gets an actual mud taste. Buffalo taste better then carp to me. Buffalo fish are native, carp were dumped here from Germany in the mid 1800's. Some fish mongers charge a little more for buffalo some dont diffrentiate between the two. Both have to be scored to be ate like a fillet. Lots of Y bones. Dont confuse the nasty asian carp with those two. I wont eat asian carp, they are nasty and have a foul odor.
