Burgoo is a long cooked stew over an open fire. Only things that we dont put in it are coon, possum and fish. Corn, onions, macaroni(secret shh), tomatoes, turnips, cabbage, navy beans, several kinds of other beans sometimes, peas and green beans sometimes, carrots and taters always. Anyone have any recipes along these lines for "mulligan stew" etc?

Lol, well I know a few that did slicktail and I tried to cook one once, ONCE. Coon's really rich though but good BBQ'd, groundhog is livable but not my cup of tea. Now 'rat and beaver is awesome! We save all of our live rats and fresh beaver. I prefer under ice beaver trapping for 2 reasons or these are 2 of them, full castors and meats cold ie: not spoiled.

ive baked beaver before and it was nothing to write home about.
maybe itd have been better if id cooked it a different way?
i have never and aint never gonna eat a rat.period.

We made muskrat bog one time. It was sooo good!! I ate too much and got sick though, because it is really rich. I love ostrich! I got it on a sandwich and that was gooooooooood!!! Rick

I loved it all. We had two of them for our bog, and we had to boil them first. While dad wasn't looking, I grabbed a bite or two from the pan. I could have just ate that, but when we made the bog, that was deliscious! Like I said, VERY rich, too rich for me. We didn't tell my mo0m what it was, and she thought it was wonderful. She thought it was venison. We then told her it was 'rat, and she said it was AWFUL ;D

Yep alot of people are prejudiced against meats/critters just by the name or the appearence.

Yeah....I love to see peoples faces when they think it is something else. My aunt always hated rhubarb. She ate it once and it wasn't good. We brought rhubarb crumble to a family get together, and she loved it! She didn't know what it was, and had everyone trying it lmao....she asked for my moms recipe, and she was soooo mad that she ate rhubarb lol but she loved it and isn't allergic or anything, so I really don't know why she was mad. Another mystery of women ;D

If you like rhubarb try gooseberry's! One of my top 2 favorite pies if not the top! "rat, beaver etc are good in burgoo too.

I have never tried gooseberry's but I have heard it is great for pie. One thing I can't stand is elderberrys....ugh those things put a pucker on your face! My aunt made an elderberry elixer, for colds and sinuses, and she gave some to me and it sure helped! It was better than Niquil! Rick

Elderberry jelly and wine is good stuff and we make some every year and just finished up for this year. With goosberrys sugaring to taste is an understatement.
