approx 5 lbs ground meat of choice approx 60/40 meat to fat ratio is best
4 teaspoons salt 4 teaspoons black pepper 1/2 teaspoon powdered cyanne 1 teaspoon crushed red pepper 5 teaspoons garlic powder 6 teaspoons brown sugar 1 1/2 tsp sage 1 teaspoon cumin 1 chopped onion 1 teaspoon chili powder 1/2 teaspoon ground cloves 1/2 teaspoon allspice 1 tablespoon thyme 1 teaspoon corriander 1 teaspoon marjoam 1 teaspoon corn starch 1/2 teaspoon nutmeg 1 teaspoon vinegar 2 tablespoons liquid hickory smoke
mix all dry ingredients and set aside. put onions smoke and vinager in food processor or blender and chop finely pour onion /smoke mixture into ground meat and and slightly mix by hand then hand mix in spices then stuff meat mixture into sausage casings ....

thats a really great sausage link recipe tho i dont really recommend possum lol but any good meat i allways grind it course so it dont pack too tight in the casings im having it for supper made with venison and pork right now
