A big pot of gizzards (30 lbs. or so) was a regular dish at the men's night out parties where my father used to work. Cooked long and slow, kind of stewed, with onions and celery they didn't last long.

Basically the same thing. Scrapple is made with less meal amd more, um, "meat". Sliced about 3/8" and fried brown. A town about 10 miles from here has an Apple-Scrapple festival every fall. Chitterlings? No can do!

Actually pretty good, scrapple sandwiches are big around here. It's not "health" food though.

I try and avoid any of the organs. Too high in cholesterol...not to mention that most of them taste awful.

I've eatin quite a few in my day. When i was a youngster i would go to Jackson on saturday with grandma an pop which was their go to town shopping day. we would stop at the colonels for gizzards and would have them as our noon day meal. I like em if they are cooked properly but you get ahold of some and rubber would be easier to chew. Pressure cook em to make em tender.
Colonel Sanders still makes a good gizzard. Only problem is i have to drive back to Jackson to get them lol. I havent found one that sell em any closer .
