here is how i make mine
take a hen and boil it till it's tender. add crab boil seasoning (but not too much) and bay leaves to the water as you boil the chicken. when the chicken is done save the water that will be your gumbo broth. i debone the chicken and get rid of all the fat and stuff like that.
I take a skillet and add just enough peanut oil to cover the bottom of the skillet. i add just enough flour to soak up all the oil and not be clumpy. (it should be about like peanut butter) i add cajun seasoning ( besure to add plenty of seasoning) brown this til it's a dark chocolate color. this is you rue. note: you can add more oil or flour depend on how big you pot is gonna be. always make more than you think you need. also you have to constanly stir it or it will burn!
bring your pot of broth to a boil. i mix in the rue til the broth is thick. i add gumbo file for taste.
you can then add what ever you like such as onions, sausages, shrimp and such. let it cook till you sausage is done then throw in the chicken. turn down the fire and just let it simmer til your ready to eat. sometimes you might have to skim a little oil off the top, it depends on how fat the chicken was.
this how i make mine and i have never had a complaint.

Making good roux is an art. Good roux makes the gumbo, bad roux breaks it. I haven't had honest to God for real gumbo in years. Not since my relatives moved from Bossier City. Now, you got me jonesin' for some! ;D

My Aunt used to live in Bossier City, When my uncle was stationed at Barksdale. She made a mean pot o' gumbo. She moved away to Oklahoma City a few years back. She loved to cook cajun and creole - good gumbo, shrimp and chicken jambalaya, you name it! I miss that stuff!

sounds good specially since it aint got no crawdads. you aint got no love for the mud bugs huh? them things are gooood eatin!!! just gotta eat so many of them to get a belly full lol down in south LA you can get a sack of'em with taters & corn at the corner convience store ... mmmmmm mmmmm good! ;D
