Here's a good one - were having tonight for dinner. This is a recipe that we always double when making it so we have some leftover.
This is pretty easy to make - except for the peeling the potatos. If you double the recipe, you will use about 10 lbs of potatos.
8 medium potatos 1 onion 2 clove garlic 3 tablespoons butter 3 cups chicken broth 1/3 cup heavy whipping cream 1 cup milk 1/3 tablespoon salt 1/8 tablespoon pepper
Cut onion into quarters and chop the garlic - sautee these in the pot in the butter until "clear"
Cut 4 potatos into chunks and put them and the chicken broth into the same pot - cook over medium until potatos are soft
Puree all of this in a blender.
Stir in the milk, cream, salt and pepper.
While all of this is happening - chop the other 4 potatoes into chunks and boil until soft. Add to the rest of the soup at the end for texture.
We always serve with cheddar and sometimes good bacon bits - if I have good bacon to use. I don't use the crappy bacon bits that are pre-made.

i love potato soup...sounds close to what i make. i dont like bacon it it though

Bacon adds the flavor. Never leave that out.

cravin potatoe soup now,my mom use to make it with just milk,potatoes,salt,pepper,garlic,celery seed dont know hoe to make it though,gonna call her up get her recipe
