Please give me ideas on making a great meal out of a swan. I get one almost every year, but all ever do with it is make a roast out of it. What could I do to make a great, flavorfull roast out of it, or any other ideas to put it up for the table? Thanks

cook it just like a goose breast ... funny but it's just about the same size ... swans aint nothing but extra neck, wing span and feathers lol i'd say cut the breast meat off the bone ... then cut in half (thickness) ... then cut again making four pieces put the cutlets between plastic wrap one at a time and pound them out really thin ... season them ... coat them in a egg wash and dredge them in flour or bread crumbs etc. ... back into egg wash ... then again into flour etc. fry them up in hot oil ... i like to make up country gravy and smother them in it ... so dang good you wont even realize what your eatin

Thanks Possum, thats sounds like a great way to cook up all the large waterfowl! Cathrynm swan permits are free for the asking over here, so that makes it cheap meat as far as wild game goes. They are a blast to hunt, and it is a special time for me when I'm outdoors. Swan meat is absolutely exellent eating, and I can't wait to get one again to enjoy.

When I was a kid, we hunted in pits for geese in Maryland. One trip, we were in a field that all the swans wanted to eat in. We had thousands walking all around us while we hid in the pits. But there is no season on them in Maryland.

ive eaten goose, but for some reason the thought of killing a beautiful swan and eating it, repulses me.

Cathryn, swans are beautiful, geese are beautiful, ducks are beautiful, deer, elk, and fish are beautiful. Not taking advantage of an animal for food cause they are beautiful would throw out wildlife and all animals in general, for our consumption. I think all animals are beautiful, some just in different way, but I eat them, cause God created them for me to do so. ;D

I'll be darned. I thought swans were federally protected.
That's kind of the way I fix goose, too. Fry it up like a chicken fried steak. I skin the legs and wings and boil them with noodles, makes a pretty good soup.

Some species of Swans are Federally regulated and some are Federally protected. Tundra Swams are regulated. In Virginia the season will be limited to 600 birds this year, season is from December 1st to Jan 31st, one per permit holder, per season.

Earls correct. Tundra swans are a game animal in many states. They make a challenging hunt and the meat is exellent. Women and kids who have tryed it loved it. The year before last, there was almost 500 swans on one shallow lake I hunt. The small lake next to it had about 200. Never seen that many before, and maybe never again. I hope i can get another one this year. I want a large male to have mounted life size flying.
