tail? if ya did, whats it taste like? ive seen some recipes but dont know if its worth cookin. Is it all fat or is there some muscle there?

I have heard that when the mountainmen talked about eating beavertail they were actually talking about the part before the paddle, not the paddle itself.
I like beaver loin chops. Take the backstrap and butterfly it and pound it with the edge of a plate, a little garlic salt, roll it in flour and fry it like you would venison.
During trapping season I eat beaver at least twice a week.
Samuel, they ain't even related to a rat, except they are both mammals. Beaver is cleaner than chicken or pork.

I have skinned beaver tail, I never saw anything worth eating there. But it may be like pig feet....to each his own.

I take the smaller ones and roast them in the oven makes some awsome roast. Some of the best eaten there is.

Beaver is some of the finest eatin out there.All sizes included , not just little ones.Slow cooked in a crock , roast beef like with no need to pound.

My wife makes makes vegetable and beaver stew in the crock pot. She loves it, the neighbors love it, her co-workers love it.........me, I can't eat it. We are gona make some beaver jerky next month, maybe I can stomache that!!! lol

We always raked out a bed of coals from a fire pit, and set the unskinned beaver tail on top. Scoop a layer of coals on top and let cook till skin splits open. What does it taste like? Not sure what to compare it with, but it is actually quite good. I eat this very little except for celebration, as it is 100% grissle! The only meat in the whole thing is a muscle wrapped tendon that runs the length of the tail bone. Not my favorite feed, but everyone should try it at least once.
