I found this recipe while browsing on the net for something different to try. While we were out trapping we came across some dumb grouse. Tried this and it was mouthwatering.
Wild Grouse Ingredients: 3 Grouse, cleaned and cut in serving pieces 1 Egg, slightly beaten 1/2 Cup milk 1 tsp. Salt 1 tsp. Garlic Powder 1 tsp. Pepper 1/8 tsp. Thyme 1 Cup Flour 1/4 Cup Butter 1/2 Cup Vegetable Oil 1 Can chicken mushroom soup 1 Cup Water
Directions: Dip grouse pieces in mixture of egg, milk and seasonings. Roll pieces in flour. Heat butter and oil in skillet. Brown pieces well on all sides. Remove from skillet and place in a single layer in layer cake pan. Add drippings from skillet to mushroom soup and mix well. Spoon over grouse pieces. Add water to cake pan. Cover with foil and bake at 350 degrees for 1 hour or until tender.

Tommy it is a must to try. It was SOOOOOOO tender and juicy I was amazed. I only cooked it for 45 minutes though because I cut my grouse up in bite size pieces. I am going to try the same recipe with venison also.

I'll have to try it on venison....We bought a 1 1/2 horse grinder from cabelas last year with a tenderizer attachment....great investment, unbelievable how much tenderer the steaks are. We double tenderized some round steaks the other day after processing and cooked that and some un tenderized tenderloin....the round steaks were tenderer...but it was all good ;D
