Roasted Bear
1 5 to 6 pound roast of bear 1/2 c Vinegar 1 tb Salt 4 c Water 3 Strips thick sliced bacon or salt pork 1 Large onion, quartered 3 tb Butter 1 ts Salt 1/4 ts Pepper
Trim all fat from the roast. Wash well Soak meat for at least 2 hours in water, salt and vinegar. Remove and pat dry. Place meat in a roaster, lay strips of bacon on top and place quarters of onion beside it. Roast at 35O degrees F. for about 3 hours. 15 minutes before serving, remove bacon strips, coat top of roast with butter and sprinkle with salt and pepper. Roast another 15 minutes and drizzle butter on top two or three times during this period. Serve Hot. Serves 6 to 8.

I've made stew with the bear we got last year. It was very good. I was surprised at how tender the meat was.
I'll have to try the roast if my uncle has one left.

bear meat is good, kinda greasy, but very tasty ;D

BTW, bear meat isn't for everyone......esp those who have a tendency to aquire the back-door-trots from other things they eat.

I've eaten bear a couple of times, but never liked it. That's one reason why I've never hunted for bear - don't want all that dang bear meat to eat!

Bear is a good tasting meat, but like everything else it really depends on how you make it. It is a very fatty meat, and the rendered bear fat is tops for cooking and baking with. I'd bet bears from the Mid West and East have much more fat and maybe even a more mild flavor. I had bear stew, bear sausage, and got some bear shortening years ago. Not bad at all.
P.S. Never did run wild after ingesting bear meat...yet.
