One muskrat, cleaned and quartered One half tsp. Salt and Pepper 1/4 tsp. paprika 1/2 cup flour 3 tbsp. Bacon fat 3 large onions 1 cup sour cream
Soak muskrat overnight in buttermilk to soften meat and remove gamey flavor. Season with 1 tsp. Salt, pepper and paprika, roll in flour, and saute in bacon fat until browned. Cover muskrat with onions, sprinkle onions with 1/2 tsp. salt. Pour in the cream. Cover skillet tightly and simmer for 1 hour. Serves 4.

Muskrats are some of the finest table fare of any furbearer. I'm sure ya'll would like it, looks like an excellent recipe.

that sounds good I've had muskrat before, it is very good eating
I was told in the upper class wild game resturants in the big cities its called "marsh rabbit"

Soak it overnight in vinegar/water. Pressure cook it with an onion cut up 'till it falls off of the bones. Then throw it in a crock pot with some sweet baby rays bbq sauce, and slow cook it for a few hours. Mighty fine eatin'. Works for 'rat or beaver. Just cut out all the glands before you prepare it. BBQ beaver is some good stuff.
