3-6 squirrels or 1-2 rabbits cut into pieces (I cut into front legs, back legs and one or two pieces of back) 1/4 cup soy sauce 1/4 cup water 1/4 cup firmly packed brown sugar 3 tablespoons lemon juice 1/4 teaspoon garlic powder 1/4 teaspoon groudn ginger
Put squirrel/rabbit in crockpot. Mix all other ingredients together and then pour over meat. Cook on low 7-8 hours. You can use the broth to thicken for gravy, but I like it thin over rice.
This is kind of chinese style squirrel - but is very good if you like chinese food.

Sounds good but I'll make mine with rabbit. Never ate squirrel. Although I hear that it tastes better then rabbit.

Squirrel is better than rabbit. Matter of opinion, I like them both, but prefer rabbit.....this recipe looks like it would tenderize even a tough ole fox squirrel ;D

Anything cooked slowly in a crock pot ends up more tender.
Did you ever notice that a lot of rabbit recipes use tomatoes, or sometime lemon juice? The acid helps to break it down some.
