HASEN PFEFFER
2 cups water ½ cup vinegar 3 tbsp sugar 1 tsp salt 10 whole cloves Half of medium bay leaf 10 whole black peppers 1 dressed, cleaned rabbit, cut into serving pieces 3 tbsp butter or shortening 1 medium onion, sliced 1½ tbsp flour 3 tbsp water ½ cup sour cream
Prepare a marinade by combining first 7 ingredients in a saucepan Heat to boiling quickly; cool Place rabbit in an enamel or glass bowl and cover with the marinade Cover bowl and set in refrigerator over night Lift rabbit from liquid and drain slightly Brown in the hot butter over medium heat (about 15 minutes) Reduce heat and add ½ cup of the 2 cups strained marinade Cover and simmer for 1 hr or until about tender Add onion and a little more marinade and continue to simmer until rabbit is very tender Make a paste of flour and water and stir thoroughly into rabbit liquid Allow to boil 2 ruin Stir in the sour cream Blend thoroughly and heat just to boiling Serve at once 3 to 4 servings
